What To Do With Your Overripe Plantain

Plantain is a staple food that can be eaten when unripe, ripe and even overripe. It is one Nigerian food you can never be bored with in the kitchen. Often times, people throw out their overripe plantains, either because they think its rotten or they simply don’t know what to do with it. Great news is, there are tons of mouth-watering recipes to try out with it.

 One of them is the one I call ‘Plan-cakes’. The preparation is very simple and the ingredients are totally easy to get.


  • Overripe plantain
  •  Sugar
  • Milk
  • Pepper
  • Onions
  • Water
  • Melted butter
  • Flour
  • Groundnut oil
  • Egg
  • Salt.


Unwrap the plantain, cut it into bits, pour into a blender and blend till its smooth.

Still in the same blender, add your chopped pepper & onions. Pour some melted butter, pour your egg and add some milk.

Blend the mixture. Pour into a bowl, sprinkle some sugar & salt into flour.

Pour flour in plantain mixture and mix thoroughly

Add some extra milk if it’s too thick (optional). Batter is  ready to fry.

Grease the fry pan with little oil.

Pour some batter in it and let it sit for some seconds. Flip it over and take it out when both sides are done (just like your regular pancake).

And it’s ready to be served!
